Did you know that Peppers are higher in vitamin C than oranges, kiwis, and strawberries? They’re also packed with vitamins E, B and A! But would you ever think to put them in a smoothie? No me neither. One whole pepper can give up to 200% of your daily allowance of vitamin C, and as someone who has had a cold for almost a month now I am up for anything to increase my vitamin C intake! It’s Pepper Time is an EU funded campaign to spread the word about just how good for you Peppers really are and they challenged me to create and taste test some smoothie recipes including peppers! I had a play around to find flavours that complemented each flavour/colour pepper and have come up with three favourites.
The Green One (makes 1 serving)
- Half a green pepper
- 250ml Apple Juice
- Handful of Spinach
- Handful of ice cubes
- One teaspoon of chia seeds
This smoothie is great to aid digestion and give an energy boost. It is very green though!
The Orange One (makes 2 servings)
- One Grated Carrot
- One peeled and sliced kiwi
- Half a grated apple
- One yellow pepper
- 150ml Water
- 1 teaspoon of grated ginger
A tangy taste with some great texture thanks to the grated carrot and kiwi pips, the ginger gives a great kick so perfect for early mornings!
The Red One (makes 2 servings)
- One Red Pepper
- One Banana
- 2 slices of pineapple (I used tinned)
- 2 handfuls of frozen red berries
- 150ml of water or a handful of ice cubes
This one is by far my kids favourite, they turned their noses up and the Orange and Green options but this one is a lot sweeter and a great way to get vitamins into little people who are a bit fussy!
